I have a brother printer and I do most of my printing in the "toner save mode" and a lower resolution that the one set at default. So if I have to print 20 pages separately, I have to change the preferences every single time I print. So it gets frustrating.

I went under preferences > Printer and Fax, and I didn't see anything that would allow me to change my default printing preferences.

Can anyone help? Why does this have to be so difficult? In windows it was so simple.

    Thanks.

You can create a preset in the print dialog of the application you're trying to print from, and then select Use Last Settings in the preset dropdown list.
OS X holds different printer settings depending on the application (since Apple believes users want to use different settings for different applications), but the presets are remembered for every application. So, in the worst case, you will have to change the preset once for every application you want to print from.
