I searched and found nothing. Besides that sound sensor bar thing... is there any sound recording utility that comes with a Mac?

iLife provides applications for this purpose.

You can record audio tracks in GarageBand. I'm not very experienced with GarageBand, but I think it's fairly straightforward. Just open GarageBand and choose Track --> New Track (or Basic Track) --> Real Instrument Track. Then click the Record Symbol (the Red Dot) to begin and click the Play symbol to Stop recording (that's not intuitive to me).

Also, you can record video (with audio) in iMovie; that way you'll be able to evaluate both the iSight and microphone quality. Just click the icon that looks like a camera.

Check out the iLife '08 Tutorial Videos for more information.

If you have QuickTime Pro it's even simpler. File --> New Movie/Audio Recording.
