After much argueing with Apple, constant resending of the forms, and general frustration... my Apple iPod rebate for students has failed to be processed.
A good call to Apple and some choice words toward buying their products again, has landed me the value of the rebate ($200) in Apple Online Store credit. Ok, its not my cold hard cash... but it could be worse.
So now i'm wondering what I should get... i can mix and match whatever I could purchase from their.
Might Mouse + Bluetooth Keyboard?
Logic Express 8?
Fork over the other money for the iPod Touch?
Need suggestions guys.

return the ipod you got that added that price to the credit and get a new ipod that came out

I'd say no to the keyboard/mouse combo - you can get a better mouse at least elsewhere.
an iPod touch sounds nice..but if you just already have a ipod anyway, seems kind of a waste (albeit it is a VERY nice upgrade).
Does it have an expiration date? Why not wait a bit until something comes out that you really need or want? -
That's too bad about the rebate. I have had good experiences with apple rebates, getting everything within about 3 weeks.
I am not a big fan of the apple bluetooth mouse, I sold mine after a few months. Maybe you will like it better. But the keyboard is really slick. Maybe keyboard + the smaller MBP power adapter? One for travel one for home. -

Could always get an iPod to sell on ebay, or something like that.
If it were me, I'd probably get an airport Extreme. There's tons of stuff to choose from on the online store. Here's what I'd look at:
A case for the notebook and/or a backpack/briefcase
External Hard drive
M Audio speakers
Digital Camera
That's just the stuff I would look at. There's tons of stuff on the online store if you look hard enough. -
You could get an XtremeMac Luna or Tango for that iPod from the Apple Store too.
