I have a video in .m4v. Can I use iMovie to extract the audio from it?

the easiest way will be through Quicktime Pro most likely, makes it very easy to export audio only.

you may be able to do this with iMovie, i don't have it on my machine right now so I can't tell you for sure.

if you aren't able to, you should be able to find free software that has that ability.
