So I plan to buy a MBP soon. I am switching over from Windows that I've used for ages. Anyways, I have an external HD with about 300GB of files I want copied to my new MBP. I know Mac can only READ NTFS. So that should be okay then correct? I just want to make sure I know every detail. All I need to do is plug-in the external HD then copy my files onto the Mac, then I'm set and the files will be fine and be fully usable correct? I know I can reformat the external HD later. I just want to make sure I can copy the files over from the NTFS external to the Mac HD.

No problem reading NTSF format. You can actually write to it with 3rd party drivers added. Just test and make sure your files copied are good. Should not be a problem I did the same thing several years ago. Another option is to make a DVD backup set for a perminate copy. I use NAS's to store all of my files on, a little more secure against a HD failure.
