I just recently got into DSLR photography, and photo editing on my current laptop is a pain. I am looking into buying a macbook pro, and I was wondering what role (if any) does a dedicated video card do for running programs such as photoshop cs3? Does the video card help with photo editing? or is it just for video editing and gaming? Thanks.

It won't do much for pixel work. There will be a bit of a snappier render time when using effects on higher resolutions. It'll help more for Illustrator, and video editing than it will for PS. I'd recommend a MBP anyway for the higher resolution and LED backlighting.
