I know I just joined recently (few hrs ago) but I've been reading the threads for a few weeks now.
So Apple updated their Macbooks with Core 2 Duo, 1 GB (2x512) Ram from 512 and 80 GB HD from 60 while keeping the same price.
Apple will upgrade to 2GB (1x1024) for about $157. I want to say this is a good deal since the cheapest (I did a quick search) 1GB 667Mhz Ram was ~$96 not including shipping. So my question is, this is worth it isn't it?
Other than that I will purchase the AppleCare Protection Plan.
As far as accessories I plan on getting BestSkinsEver's Full Body Skin for ~$25. I have their full body skin for my BlackBerry and its great! Same product as ShieldZone except cheaper!
Is there any other accessories that you (all) would recommend getting?

Also, I was reading about Santa Rosa(?) and the Macbooks getting an upgrade to 800Mhz FSB. Now I feel like I should wait...confused now. Any suggestions?

The memory prices look fair. I got the same on Dealram as you for the 1GB chips. It says 2 512s are worth $100, but you get less than that on eBay, and you have shipping and tax to deal with if you buy your own 1GB chips, so you're probably looking at less than a $40 difference. For that amount it's not worth the trouble.
You might want to get a 80GB external 2.5" USB 2.0 hard drive (preferably with a SATA drive inside) and use the freeware Carbon Copy Cloner to make a backup clone of your internal hard drive. The hard drive unfortunately is still the most unreliable piece of equipment in your computer. I've had 2 hard drives go on me in the last 4 years. Fortunately I kept recent cloned external 2.5" drives, so all I had to do was replace the internal drive with the drive from the external enclosure (and send the internal drive in for warranty replacement). AppleCare may not allow you to do this, though. -

I read reviews for it online and it was mixed but mostly positive. The site does not say if it is a SATA drive though but it is a USB 2.0.

There really isn't much difference between PATA and SATA on external drives. The transfer speeds of both units should easily be able to max out the bandwidth of either FW or USB 2.0. Of course, I'd rather go with SATA as its easier to put into my server if need bet, but otherwise, not much difference in performance between the two in external enclosures.

Has anyone had bad experiences with Amazon rebates? AR, Amazon is offering the Macbook at almost $70 cheaper than from Apple.com (with student discount).

I've never used Amazon rebates. I generally avoid rebates. They take forever. I still have yet to receive my rebate from Apple when I purchased my system (for the free ipod).
