I just got a new 2.4 GHz MBP and on a whim I grabbed a $10 laptop cooler off of ebay, which basically consists of an elevated piece of plastic with three 80mm fans to pull air off of the button of the case. I only did some cursory tests but I'm not sure if it actually cools down the case significantly. Under load the GPU seems to hit around 75-78 degrees. Should I even bother using it? Will it make any difference?

I guess it won't hurt to have it, nor is it going to make a huge difference I think. Under load, the GPU temperatures are pretty much average...modern components can withstand over 100 C in temperature, so its not a huge deal!

If you really want to be able to notice a difference in temperatures, you need to get a cooling pad that is made out of Aluminum. Aluminum is a good conductor and will draw heat away from the notebook more easily than plastic.

Honestly that would do nothing next to an aluminum based notebook cooler. The Zalman is pricey but you get what you pay for. An alternative which many reviews specify are great for MBP's is the Rosewill RNA-7000W. It retails quite cheap and will beat out any plastic cooler for the MBP.

i see what you mean by the zalman being aluminum, but it pushed out A LOT less air than the lapcool 2. imo. The zalman was also pretty big, hard to fit into most of my bags. But it was a quality, very well built cooler though.
