In hope that tomorrow includes a bump for the MBP line, I am planning on purchasing one and wanted to take advantage of two external monitors and the MBP's screen at the same time.

If anyone has accomplished this setup, I would be grateful for your insights.

Buy one for $40~ and you'll be able to use your 3rd monitor easily as long as you don't play any 3d intensive games on that screen.

Yea, look into various usb-DVI, usb-HDMI solutions. They are starting to popup, as it's fairly new tech, but there should be a few out there.

There are more expensive options, if you purchase an older MBP with an expresscard slot, there are enclosures that will plug into that and provide you with a standalone videocard. which can then actually power something 3d if you wanted it to. But again, those are for older models, and are expensive.

Best bang for your buck are these new usb devices
