I finally installed Adium and it works great, but it wanted Growl installed as well. I installed it and growl is always running now. It is using RAM but I have yet to figure out what it does yet.
What does Growl do? It lists options for Skype as well. I don't want it messing with skype really. If it isn't doing anything useful ever how do I uninstall growl?

It will notify you in a window of events. For instance display a incoming msg and or mail.
Go to growls website and check out the different applications it works with. -
Those notices that appear at the top right hand corner of your screen (unless you changed that setting) is Growl. It's very nice.

maybe I have it turned off. How do I turn growl back on to show things?

Go to Adium menu->Prefs->Events-> and choose the events that will use Growl notifications. I for one use it only to display new conversations.
