I thought I remembered reading a while back that their hard drives are not user-replaceable like the MacBooks are. Is this true?
I'm getting more interested in trading up for a MBP, but I would want to put my own 320GB hard drive in it, not pay $225 for a 250 or $275 for a 200GB 7200 RPM, it's just such a rip-off compared to just getting a 320GB on Newegg ($200, PLUS you'd still get the 120 in the MBP).
Also, when was the last time the MBP was updated? Is this a bad time to buy one? I wouldn't mind holding off a few months if they're going to update it relatively soon.

Sadly the MBP does not have a user-replaceable HD. You can probably take your HD to an Apple store to have them replace it for you. The last time the MBP was updated was back in June of 2007. The next update might be this summer, with Penryn's installed.

There's some shady rumor running around that Apple will release an update on the current MB/MBP line (most likely Penryn processor update) sometime late this month.

I just upgraded my MBP hard drive. It ain't an easy process, but it is very doable. All you need are the right tools and patience. Overall, the whole process took me ~30 minutes. After the upgrade, the notebook looks as good as new.

I'd say the next update won't be summer...that'd be a full year since the last update, and Apple wouldn't do that with its flagship notebook. I'd expect a refresh pretty soon for Penryn.
Yes, the MacBook Pro's hard drive is not user-replaceable, in the sense that Apple can void your warranty for it. Its definitely do-able, but yeah, you risk voiding the warranty. You can have an Apple certified technician install it for you though.
