I've searched quite a bit, and haven't seen the answer to this or I may have just missed it. I know for the M15x hdd/ssd you can use a 2.5" drive, but does the drive height matter a whole lot?
Reason I am asking is because I am seeing a lot of ssd's being 7mm, and not sure if they will fit? I believe the standard ones were the 9mm or 9.5mm which definitely work?

Not really; the side screws have to be flush. Unless it is a caddy then get a deeper one so that you can fit a 1.5 TB hdd in the future.
-
7mm ssd/hdd will fit perfectly fine, 12.5mm/15mm will fit in the hdd caddy/bracket but then the bracket won't fit due to added thickness.
-
What about the 9mm/9.5mm drives? In regards to the standard hdd slot.
-
9/9.5mm should be fine.

9.5mm is standard it will work very easily. The 7mm SSD factor is more tricky in that you need to attach the SSD to the caddy so that is stays in place. Due to its being thin without doing so will not keep it in place. This is easy though as the screws are all provided and the caddy is designed to be used in this manner also.

You can put a hard drive in the optical bay by using a caddy.
