I'm thinking about buying the m11x r1 for cheap(700ish) /w SU7300, then later on upgrade to a corei7, is it easy to upgrade the CPU in the m11x?

There's no upgrade, the CPU is soldered on the motherboard and the motherbard and chipset of the R2 are different.

Your only upgrade path will be to buy another M11x with the corei7 cpu at a later date.

Only major m11x upgrades are Hard Drive and Memory.

R1 is a great computer and 700 is a good price.
