I'm going to be purchasing a 500gb momentus soon to put in my m11x.
What is the best way to do this without losing my data? Is there a way to copy the old HDD to the new one or will I have to do a fresh install?

And if a fresh install how would I do it as I don't think any discs came with my m11x.

ETA: Also, how does the momentus do with partitioning? Say if I wanted to partition off 150GB for a linux distro.
Is the SSD portion split up or only used by a certain partition?

Acronis True Image has an awesome utility for cloning your drive and moving it to a new one.

However you will need a USB sata enclosure/adapter to close your old hdd to the new one. These can be had for a few $ on ebay.

Acronis is payware i belive. But there are probably free programs that do the same. Or it could be obtained through other methods ;)

I prefer methods such as acronis or similar tools.

Lots of ways but there is even a built in tool for this (havent tested) for creating system images. Look in control panel. Its intended as a backup tool but if you go this route the cool thing is at the end of the day you will have a backup - which you should have anyway.
