I tried over clocking my m11xr2 i5 for the first time and could only stay stable at 1.56. Is this normal? Is there anything I can do to improve my overclocking ceiling?

It's not uncommon for people with the R2 to not be able to take it any higher than the 150s. There's likely nothing you can do to increase what your CPU will be stable at. The only variable you have any means of changing is cooling, but I suspect that you're likely not going to have any luck with that either. The easy way to test that would be to raise the back end of the notebook about half an inch to see if the better intake makes any difference. That or a proper cooler.
