I keep getting stuck on the apple boot logo after I finish installing. Can anyone help?

In my experience it is very unreliable. And would not recommend it.

I have had success with VMware as well.
I did have success with my m11x a couple years ago fully installing and boot 10.6.3 but once I tried to update, it would corrupt the image. If you don't have the exact hardware Apple uses it is extremely difficult to do. Now there is a few people out there that create a more Windows friendly version of the image but even that still is not 100% reliable.
I have given up on this venture and if I really need a mac (which I don't think I will ever) I would just buy one. -

Me too, haven't tried with virtual box though.
Anyone successfully have osx with virtual box?
