You can, you don't need any specific drives (i.e. 2x256gb --> same size preferably)

If you use different sizes the RAID will be created based on the lower storage capacity which will make you'll loose some space.

I'm thinking of replacing my HDD on my AW 14 and putting in an SSD. How hard would that be? I know you need to remove the backplate and the ODD is that all? Don't need to remove the keyboard or anything right? I hope it's easy

Unplug the ac adapter connected to your PC. Remove the bottom cover. Also remove the battery when you are working inside the PC. Remove the ODD drive and you can access your hard drive in the primary slot. It is easy.

Just make sure you touch metal before touching the components inside your laptop. It helps drain the static electricity in your body and save you from component damage. hope this helps.

    Just what Sweethoney said.

    A couple of tips:

After you disconnect the battery hold down the power button for at least 10 secs to drain all power.

Also the connection from the hard drive to the motherboard is in a tight space. Be careful when lifting the tab to remove the ribbon cable, you don't want to break that tab that secures the hard drive cable in place.

For some stupid reason you can't easily find these tabs, the mother board would have to be replaced.
