I have a lot of cables on my desk, so could do with at least reducing the one for the mouse, if not the keyboard as well!

What do people recommend for mouse/keyboard? I do have a USB hub in my current keyboard, so would also need one of those.

More details would help. What kind of mouse or keyboard do you need? Is gaming performance important? What's your hand size and preferred way of grip? What type of key feedback? What's the budget?

You would still need a cord for your new USB hub even if you get a wireless keyboard. You should probably stick with your current keyboard.

For your mouse, is there a reason you want bluetooth over one with a USB wireless adapter?

I figured I'd likely be keeping the keyboard.

I assumed that Bluetooth would be the common tech, that's all.

Bluetooth is less common and can cause some trouble, but if your computer already has bluetooth you don't need any external adapter.

Using a wireless mouse that has a tiny USB adapter is easier. You plug it in and it just works like a corded mouse would. The majority of mice are made this way.

If you need to use one wireless device on different machines or operation systems, Bluetooth usually require re-pairing, especially under Windows. Plug-n-play with a physical adapter is easier.

If you have strong interference on the 2.4G band, buying a 5G wireless device can help you get around it.

There's the microsoft bluetooth mouse that one is really good i have one laying around that i haven't used for many years it was very reliable felt weird a bit without a chip, it can kill the battery somewhat but with computers voltage improving it's not an issue anymore.
