When asking for help, you need to post more information about your system. Each model has a number of items that can be changed, and these often make a difference.

I'll do the best I can here in general terms.

CPU performance mode has processor overclocking options. These will be limited with the 6700HQ CPU, as Intel have deliberately locked down the CPU. The 6820HK has more options, such as being able to set the clock multiplier and voltage options.

Fan performance mode isn't of much practical use. It mostly just makes the fans go high speed all the time.

DIMM overclocking is something that you should only play with if you know what you're doing. The wrong settings will make your computer unstable.

With your CPU, the performance options will probably only allow you to change the voltage settings. This potentially allows you to run your CPU at a lower voltage, extending battery life, but requires quite a bit of playing to get it right.

I'd go with HWinfo64 over fan performance mode. HWinfo64 lets you adjust the fan speed and curves so that you can make the fan go faster if you need it to (although the system fan curve isn't too bad). Fan performance mode just runs the fans all the time, whether they're needed or not.
